Instructions.

  1. Soak the lentils
    Place the lentils in a bowl and cover them generously with water. Let them soak for 6 to 12 hours. This softens and activate them, and ensures a smooth, even batter.



  2. Preheat the oven
    Heat your oven to 180°C / 350°F. Line a loaf pan with parchment paper or lightly grease it with olive oil.



  3. Drain and rinse
    After soaking, drain the lentils and rinse them well until the water runs clear.



  4. Blend the batter
    Add the soaked lentils to a blender or food processor. Pour in the 150 ml warm water, add the olive oil, Celtic salt, and flaxseeds if using. Blend on high until the mixture becomes a smooth, thick batter.



  5. Adjust the texture
    The batter should be thick but pourable – If it feels too thick, add a splash more warm water. If it feels too runny, add a bit of extra flaxseed or blend a little longer.


  6. Transfer to the pan
    Pour the batter into your prepared loaf pan and smooth the top with a spatula. Gently tap the pan on the counter to release any air bubbles.



  7. Bake
